Cleaned out!

I organized our basement freezer not long ago. I had no idea there were still so many strawberries and raspberries from last year. I couldn't even remember buying the two huge (5+ lbs. each) packages of ground beef. Good grief.
Today I finished processing these two things. I made a dozen packs of pre-cooked and seasoned taco meat. I made 100 meatballs. I made freezer jam to last for a while. Now, my freezer is full of go to stuff for meals, all homemade!

The freezer jam and taco meat is pretty obvious, but if you're curious about the meatball recipe:
I adapted The Pioneer Woman's meatball recipe. Basically, I just cooked them in the oven for 30 minutes at 350* instead of in the sauce. It is a bit time consuming to brown them all in the pan first, but it is WORTH it.

I just went to the pioneer woman site and printed off a bunch of recipes. Thanks for the idea! I am curious who you guys picked to do your basement.

Wow, wonder woman!!!

Whenever I have a cooking extravaganza day, my back is killing me by the end of it. Make sure you take some time today to put your feet up.
