So I need to make dinner. This feat seams almost impossible to me right now. The problem is I haven't cooked dinner in about 3 months. It's bad. Last week my husband was on a business trip and I figured if he had a ridiculously large per diem, I shouldn't have to cook. We ate pizza, chinese, burgers, and egg salad. Before that I was at my Mom's house for three weeks. Enough said. Before that, I was hopelessly nauseous and my husband bought us large quantities of frozen dinners. The point is I am very much off my cooking routine. And tired. My husband is graciously going to the grocery store for me (again) tonight while I have mutual. I need to make a list. I don't know what to make. I need some inspiration...and probably another egg salad sandwich too.

I can't wait to see what people write you back because I need ideas too. I'll let you know what I am attempting tonight...I have the sourdough going in the bread maker and I am trying to duplicate the sourdough wraps they make at Great Harvest. I am thinking I will call it a Chicken Tuscan Sourdough wrap. Sorry. Not really a recipe, but still an idea :)
Hey, this reminds me of being in the grocery store by Brian Head where you were trying to figure what to make for dinner. :) How about tacos? I love those Azteca Salad shells to put Taco Salad in (you can find them guess where...in the refrigerated section near the butter and Mexican cheeses).
As far as other ideas go, chili and soups are always good winter comfort foods.
I also found this great crockpot recipe that I made recently and it was easy and really good (and lots of leftovers so you can get over eating those egg salad sandwiches) ...
4-5 chicken breasts (throw them in frozen)
1 can corn, drained
1 can black beans, drained and rinsed
1-15 oz jar salsa
1/2 t cumin
1/2 t garlic powder
1/4 t cayenne pepper
Throw all these ingredients into a crockpot. Cook on high 4-5 hours or on low 8-10 hours. The last hour turn to low and put a 8oz block of cream cheese on top. It will melt to a creamy goodness.
I served this over rice. And the leftovers are great for burritos, tacos, or any other Mexican delight you can think of.
I am the queen of quick meals - perfect all the time? Absolutely not, but I keep my freezer stocked with stuff that helps me on the nights I get home from work at 6 pm to 2 starving children. I always keep on hand, frozen meatballs, frozen chicken patties, popcorn shrimp,etc.
Meatballs
Mix 1 can tomato soup
1 cup brown sugar
1/4 cup vinegar
1/8 tsp dried mustard
Mix & warm & then throw in some thawed meatballs (as many as needed) & serve over rice. Easy Peasy!
I keep meaning to call or at least email you a congrats on the new baby!! I'm so excited for you! Sounds like you really have your hands full right now with the baby, your calling, plus being a mom already! I don't think you need to feel bad for not making the best meals ever every night! ;) Besides, pizza's totally good for them. Grains, veggies (usually), dairy. . . right?

Ummm... I would like to say I have been cooking....Rachel's recipe looks great- I am going to try it. BUT our old stand by is breakfast for dinner. I love breakfast burritos, egg "mcmuffins" on bagels, waffles....really the list could go on. Oooo I am getting hungry just writing about it. Our other stand by is grilled chicken, refried beans and rice...with salsa. Super simple, Jordan does most of the work and it is warm, light and freshish.
A couple years ago, I typed up a bunch of our favorite recipes. Most are pretty simple... I'll send you an email with the Word file.
You've always got such great meal ideas! I think I'd be embarrassed to send you my lame dinner ideas. :)
