The Best Meal I've Ever Had:

Fish and Rice with a Peach Salsa
When I had that monumental meal, I was in Seattle. Eating every single bite off that plate on the patio of a waterside restaurant helped sear the memory in my mind. Tonight, I made my version of the dish (pictured above). It wasn't as good, but then again my backyard doesn't smell like salt either.
In related news. I am eating tomatoes at every meal thanks to my prolific garden:
On egg whites,
with bean dip, diced, sliced,
on sandwiches and burgers, and of course, in salsa...
there are at least two tortilla chip bags in my kitchen trash right now. More in the trash in the garage. It's an addiction.

I actually used my puny little crop of tomatoes last night on some burritos. I must say that your look a lot prettier than mine do. Good job on being self sufficient.

I guess one of my biggest problems is knowing what to do with all of the produce that comes out of a garden. Looks like you've got it covered. :)

I love tomatoes! You are such a wonderful cook. I love that you are so creative and able to branch out and try to recreate something that you loved.
