One of my FAVORITE holidays

It's crazy how in one week we are celebrating St. Patty's Day, my birthday, and Easter! I am fond of St. Patrick's Day in large part because green is my favorite color and people wear lots of it! Yesterday was so great, we started with green pancakes (and ham). They turned a bit brown when cooked but were so yummy and fun. The day ended with corned beef and cabbage. I guess all we did that was special was eat...that's also probably how the next two holiday's will go too.
As you can see I tried to make shamrocks but failed miserably.



These are the best whole wheat pancakes (and so easy). Here is the recipe for anyone who's interested:


Combine 1 cup milk and 1cup whole-wheat flour in a bowl and whisk together well.


Add 1/4 cup sugar, 2 eggs, 1/4 cup melted butter, 1 t. baking soda, 2 t. baking powder, 1/4 t. salt.


Use whisk to mix everything together well. Pour onto hot griddle and enjoy!


**the batter is a bit runny so be sure to leave ample space between pancakes on the griddle**

SO funny, did you see my blog? Greg did the same thing...Green pancakes, shaped like shamrocks! My kids thought it was so funny. You are much more festive than I am. I'm impressed.

HAPPY BIRTHDAY!(today is the day) I hope it is a good one and that you get to wear flip flops. I miss the days when we celebrated together. My favorite thing I remember about living with you was how clever you are. From great hand writing, to organizing markers, to arranging flowers for your wedding (I still want pictures posted). I wish we lived closer so you could help me with my house. Love you. Emily
